RACHEL FONTENOT / MAD DONNA'S PATTIES

8 Sweet Potatoes

1/2 t Salt                                                

1/2 t White Pepper                                     

1/2 t Cumin                                               

1/2 t Coriander    

                                      

 Directions:

Roast potatoes in the oven for 1 hour, or until cooked through. Allow to cool on speed rack. Once cool, peel and mash potatoes. Add remaining ingredients and mix thoroughly. Portion into 6 oz patties, coat in masa flour, and wrap individually.                   

 Corn Hash

 2 c Corn                             

1/2 c Red Bell, diced

1/2 c Green Bell, Diced 

T Cilantro, Minced

1 T Lime Juice

Salt & pepper to taste

 Directions:

Mix all ingredients.

Sweet Potato Enchilada

Fry potato patty for 2 minutes, or until golden brown

 While that is cooking, place 2 corn tortillas on the flat top for 15 seconds on each side

When finished cooking, cut patty in half

Roll each half in a tortilla

 Cover entirely with enchilada sauce

Cover with 3 oz cheddar jack cheese

 Place in broiler until cheese melts and browns a little

  Place 2 oz corn hash in the center of the enchiladas
